Can a contractor charge for millwork?

I am currently gut renovating my apartment. My contractor's bid excluded millwork b/c we separately bid that out. Now that we have accepted a millwork bid, my contractor wants to charge his percentage on the total amount of that contract. I am currently gut renovating my apartment. My contractor's bid excluded millwork b/c we separately bid that out. Now that we have accepted a millwork bid, my contractor wants to charge his percentage on the total amount of that contract. Our architect designed the millwork and the millworker will be handling fabrication, delivery and installation -- the contractor will essentially just be coordinating and perhaps touching up walls after installation. I don't see why this would entitle him to a percentage of the total amount of our millwork contract. There is just no relationship between the amount he wants to be paid and the work he will be doing (i.e. if we went w/ budget cabinets instead of custom, it would be exactly the same work on his part, but he'd get paid substantially less).
