Looking for more insight into this. Does anyone familiar with this building know how many square feet this unit really is? Doing the math from the floor plan, you come to 1,077 sf and this includes every interior wall, column, etc. (In other words this is based on calculating the sf based on considering this entire apartment being one large rectangle.) Is this common convention? Is anyone familiar with the standard methodology to calculate?

There is no common convention for co-ops.

I just found the Fannie Mae standard for co-ops: https://www.efanniemae.com/sf/formsdocs/forms/2090.jsp.

Other entities may have other standards. Pick one, and apply it to every apartment you look at.
