Anything is possible, but it seems like a lot of effort for a compromised result. Why not just cut out the tiles/board, and replace with fresh sheetrock, so you start clean?

you can rip off the tile, shouldn't be a lot of work, and then sheetrock. if you have existing counters, it will definitely be noticeable if you don't retile on new sheetrock.
