Some buildings will make you change all the branch lines and install new shut off valves if you start opening up the walls. Get a copy of the alteration agreement from the management company and see what documentation is asked for.

If you are renovating the bathroom and kitchen it might not be a decoration agreement and probably is not.
How are you not touching plumbing or electric if you are renovating the kitchen and bathroom? Most buildings require you to bring the branch lines back to the riser and you might need permits. You should submit a scope of work to your building and see what they say
