You have to remember that this building was constructed at a very different time period. Back then, they were basically no Developers building the types of kitchens and bathrooms you see in new developments today. No one was putting in Viking stoves and Sub-Zero refrigerators, etc. Trump Tower was built with "Builder quality" kitchens and baths on the assumption that everyone would be ripping them out and putting in their own style. At the time Trump said something like "I love a black marble bathroom, but I'm not going to build a building with 200 black marble bathrooms."
The kitchen in this listing is an example of what developers were putting in "fancy" condos:

The fancier the kitchen, the less cooking is done in it. LOL!

I take your point about materials, 30, but what looks so odd to my modern (ha!) eye is the tiny footprints of the kitchen and bath. Even compared with Trump World Tower (built 18 years later) there's practically no counter space in the Trump Tower kitchens. (RealEstateNY, I take your point that these buyers are probably eating in restaurants a great deal). The bathrooms only have one sink and generally only a tub/shower instead of having them separate -- today's giant bathrooms may be a consequence of ADA, but I feel like they're what clients are used to.
