This is obviously the end result of the combination of three adjacent 1-bedroom apartments. "Swapping" a bath for an entire room is not as easy as you think, and would probably not be approved anyway.
The schlep from kitchen passing a bedroom door all the way to dining is not good.
It's a combination of 2 and 1 bedroom apts. there is open wall between kitchen and dining. Except for one bath rest seems to flow?
Hmm. I think it may be better with bedroom #3 as the dining room and making the media area into bedroom #3. Of course, not everybody wants a "formal" dining room.
But seriously, "gallery?" Are you supposed to hang a piece between the pantry and the washing machine???
If I were to spend some more, I would open the kitchen to the dining room (+ expand into the living area, if possible) and close the kitchen to the third bedroom. I would not waste money on swapping study and bathroom. I would create an addition bath in place of study. Additional baths add huge value.
Well, you can't spell gallery without gall-the very thing one would have to call it that.

I've often thought that 2 + 1 >3 at the Copley - these 2 specific lines, in particular (I think 2 such adjacent apts were on the market very recently).
As a family apt, if you can't have a master bedroom wing in one corner and other bedrooms in another, then I prefer to have all 3 bedrooms stacked together, and have the 4th function as a library/den/guest room. In this case, you can't expand the kitchen because of various support beams - the best you could do would be to have a pass-through (don't love the look). Or if the building permits, expand the kitchen (not the wet parts) into the "media room".
Forget the last sentence - I meant to say dining room, but I don't know where else you could put the sink. Pass-through may be the best you can do.
F&G on the lower floors is a slightly better combo.
