Unmarried couples can certainly get mortgages. I think the process is slightly less straightforward than for a married couple (and comes with different considerations for each member of the couple), but it's certainly doable.

No. I have friends who did this. Most lenders, however, did not treat them as the sum of their parts (one of them had the cash for the downpayment but did not make enough income to cover the carrying costs and the other was the high earner who could alone cover the carrying costs but didn't have enough savings for the downpayment) and at least one bank rejected them because neither would have independently qualified for the mortgage. They shopped around and found another bank that gave them a morgtage, but I think at a higher rate. I can find out which bank, if you like.
